Ingredients:

  1. Coriander seeds - 30 grams
  2. Cumin seeds - 15 grams
  3. Turmeric powder - 10 grams
  4. Red chili powder - 10 grams
  5. Dry mango powder (amchur) - 8 grams
  6. Black peppercorns - 5 grams
  7. Cinnamon sticks - 5 grams
  8. Cloves - 4 grams
  9. Cardamom pods - 4 grams
  10. Fennel seeds - 3 grams
  11. Bay leaves - 3 grams
  12. Caraway seeds (shah jeera) - 2 grams
  13. Mace - 1 gram

Instructions:

  1. Dry Roast Spices: Heat a pan on medium heat. Add coriander seeds, cumin seeds, black peppercorns, cinnamon sticks, cloves, cardamom pods, fennel seeds, bay leaves, caraway seeds, and mace. Dry roast the spices until they become aromatic, stirring constantly to prevent burning. This should take about 2-3 minutes.
  2. Cool and Grind: Allow the roasted spices to cool completely. Once cooled, transfer them to a spice grinder or a high-powered blender. Add turmeric powder, red chili powder, and dry mango powder to the roasted spices.
  3. Grind to a Fine Powder: Grind the mixture to a fine powder. You may need to do this in batches if your grinder is small.
  4. Sieve the Powder: For a smooth texture, you can sieve the ground spice mix to remove any coarse particles. Grind any coarse particles left in the sieve and add them back to the mix.
  5. Store: Transfer the Kitchen King Masala to an airtight container. Store it in a cool, dry place away from direct sunlight. It will keep well for several months.
